1) Alkaline = alive, organic
    Acidic = inorganic, dead.
The Textbook of Medical Physiology by Arthur C. Guyton, M.D., probably the most recognized authority on human physiology states: "...the regulation of hydrogen ion concentration (pH or acid/alkaline balance) is one of the most important aspects of homeostasis." (Homostasis is where the components involved seek an equilibrium.)

The diet is based on 75% alkaline foods and 25% acidic foods. That creates a chemical balance withing the body. The scientists have discovered that sick people's body ph balance was acidic while healthy ones' was alkaline. 

Alkaline Ash Foods
Almonds, Lettuce, Apples, Lima Beans, Apricots, Limes, Avocados, Millet, Bananas, Molasses, Beans- dried, Mushrooms, Beets,  Muskmelon, Blackberries, Onions, Broccoli, Oranges, Brussels sprouts, Parsnips, Cabbage, Peaches, Carrots, Pears, Cauliflower, Pineapple, Celery, Potatoes, Chard, Radishes, Cherries-sour, Raisins, Cucumbers, Raspberries, Dates-dried, Rutabagas, Figs-dried Sauerkraut, Grapefruit, Soy beans-green, Grapes, Spinach-raw, Green beans, Strawberries, Green peas, Tangerines *, Lemons, Tomatoes, Watermelon. Sprouted seeds and grains!

Acid Ash Foods
All meat and eggs, all dairy (butter, milk, cheese, dairy ice cream, whey protein, etc),  
all grains (Barley, all rice, Peas-dried, etc)
all beans (lentils, black beans, etc)
certain fruits (Blueberries, Plums*, Carob, Prunes*, Cranberries*, Currants, Squash-winter,  
all seeds (Sunflower seeds, pumpkin seeds, etc)
most nuts (Walnuts, Brazil nuts, cashews, etc)
Honey



*Leaves an alkaline ash but has an acidifying effect on the body.

When healing from eczema  we must stay away form meat, wheat and dairy products! The only acid forming items one can eat are plant based and non-processed! Some people with eczema are sensitive to citrus. I can have a little bit of citrus (tomato included as well as eggplant) but if I have more than a little, I get a rash! During my first 4 months I avoided all citrus and after 4 months I added some back into my diet without major rashes (if I stay within my limit).

Neutral Ash Foods
Sugar, Corn oil, Olive oil. 

In general, fruits and vegetables leave an alkaline ash residue while meat, dairy, grains, and nuts leave an acid ash residue. Although citrus fruits such as oranges and lemons contain citric acid  and may have an acid taste, they are not acid forming when metabolized.
The acid-forming potential of a food is determined largely by the chloride, sulfur, and phosphorus elements found in the noncombustible mineral residue or ash after metabolism of the food has occurred.  Acids such as those found in citrus fruits are normally fully oxidized by the cells during metabolism and leave no mineral residue.

I have heard of many different versions of Alkaline and Acidic foods. I find that confusing and I simply decided to stick with this list because that is what the lady who has cured herself from eczema (top link on the right) was following. It worked for her and it worked for me.

I also like (and it makes sense to me) Dr Joel Robbins's list which is a bit simpler:
ALKALINE: 
raw fruits and veggies, lightly steamed veggies, sprouted grains, seeds, nuts (all alive foods)
ACIDIC: 
meat, dairy, canned food, grains, over cooked vegetables

Both lists are pretty close and whichever one you chose to follow is ok, you will reap the benefits of health!


2) WHY WE EAT

The only qualities of food which the body requires in a complete package are the following:

  • Glucose
  • Protein
  • Fatty Acids
  • Minerals
  • Enzymes
  • Water

If all of these components are in the food, the food is complete. If any of these are missing, the food is not "Real Food". Real Food is provided by Nature in this form as raw fruits and vegetables. Raw fruits and vegetables contain all of the parts mentioned above. If food has been processed, cooked or altered in any way so as to change or eliminate any of the above ingredients, it is no longer "Real Food" as far as the Human Body is concerned.

Plants Are the Source of Real Food For All Life Forms
The plant kingdom utilizes sunshine, carbon dioxide, oxygen, water and organic minerals in the process of photosynthesis to feed itself and grow. The result is a living plant (food for animal consumption) containing:

  • Glucose
  • Protein
  • Fatty Acids
  • Organic Minerals
  • Organic Enzymes (vitamins)
  • Water (pure)

Inorganic Mineral from the Earth + Photosynthesis = Organic Minerals from Plants which provide Protein and Enzymes for animals and humans.

The animal kingdom does not possess the ability to perform photosynthesis, therefore must rely on the plant kingdom to prepare its food.


Any form of processing nature's foods (such as pasteurization, cooking, adding preservatives, etc.) breaks the bonds between the food components and their attached enzymes as well as destroys the enzyme. The result is inorganic or denatured food components and thus inorganic food.


The enzyme must be alive and attached to the mineral or food component in order for the body to utilize it. The enzyme acts as a "passport" to get the mineral into the cell of the body and aids in the cell's utilization of that mineral. Raw foods are living and thus produce life in the body; because they have intact enzymes they are organic. Enzymes are catalysts - substances which help the body work more efficiently in utilizing food for life maintaining purposes.


An example of an inorganic substance is table salt. It is simply sodium and chloride. No enzymes, thus it is dead and the body cannot use it. Our bodies cannot attach an enzyme to inorganic substances, except at great cost. It is only the plant kingdom, through the process of photosynthesis, that can attach enzymes to inorganics and make them living or organic.
The more we process a food, the less nutrient value it retains. This is because living foods are organic foods. Processed foods, to various degrees, are inorganic or "dead" foods.


NUTRITIONAL VALUE OF FOOD

The following is the hierarchy of food preparation starting at the top with no preparation leaving the food with its full nutrient content, ending at the bottom with the most processing, rendering the food dead and useless to the body - little or no nutrient value retained:

RAW and WHOLE
or JUICED and consumed immediately
once the skin of fruits or vegetables is broken, oxygen combines with the enzymes and kills them (this process is called "oxidation")


DEHYDRATED or DRIED
loses 2-5% of nutrient value
dried without chemicals or additives
commercial brands of dried fruit contain sulfur-dioxide; exception: raisins)


FROZEN
freshly picked and frozen immediately
loses 5-30% of nutrient value


STEAMED
loses 15 - 60% of nutrient value
steamed means the green bean is still a bit crispy (if it's limp, its cooked)


COOKED
baked, broiled, boiled, grilled, steamed too long, home canned
the green bean is limp
loses 40 -100% of nutrient value, depending on how long it is cooked


COOKED LEFTOVERS MICROWAVED
Loses 90 - 99% of nutrient value


COMMERCIALLY CANNED FOODS, FRIED FOODS, FOODS with ADDITIVES
these not only lose 100% of their nutrient value, but have toxins added to them

3) PREAPARING FOOD:

COOKING: 
use coconut oil or olive oil.

SALAD DRESSING:
1) apple cider vinegar leaves alkaline ash. Use it with olive oil, garlic powder and basil. You can also make a combination with maple syrup, apple cider vinegar and almond butter with spices.
3) simple lemon with some basil is also delicious
3) If you cannot use anything with citric acid (citruses, acid taste), then I would recommend only herbs like basil, dill, garlic powder and olive oil.Pumpkin oil has a nice flavor to it as well as pumpkin seeds added to salad for taste.

SAUCES:
1) If you are ok with citruses you can make your own tomato or pepper sauce.
2) Organic Tamari sauce is ok because it is fermented. Do not use it too often, especially during the healing time. I used it once a week as I was allergic to soy and "iffy" about Tamari as well.

OILS:
Oils to put in your smoothie or pour over salad....
The highest quality oils are Hemp oil and Flax seed oil as they contain the biggest amount of Omega 3 and Omega 6! Our bodies need those oils in order to repair the skin, boost up the immune system, protects us from viruses and provide the perfect harmony of fatty acids!
Hemp Oil (Organic, Cold Pressed so it retains the nutrients) contains the highest ratio between Omega 6 and Omega 3, 3:1. According to Udo Erasmus (Erasumus, Udo.  (1993).  "Fats that Heal, Fats that Kill. "  Burnaby, BC: Alive Books.), the expert of oils this very oil is on top of his list of all oils!
Flax seed oil (Organic, Cold Pressed) is excellend as well and its Omega 6 and Omega 3 ratio is 4:1
.
Regular oils people use have the ratio 25:1 /50:1 which is by far not enough of Omega 3.

CHEESE:
The only cheese that is easy to digest is goat cheese! Avoid all others! I did not use any, but some do and are ok with it. Eat it once a week as it contains casein (a lot less than cows milk) and many cannot digest that either. See how your body responds to it.
(one does not have to become vegan, although it would be ideal for the body - always observe your body and its reactions).

BREAD:
1) Sprouted breads are good.Whole Foods store has a lot of gluten free or yeast free breads.
2) There is a raw vegan bread in Whole Foods store, called "Lydia's Organics". One may  have to get used to the taste as it is a bit crunchy. Health wise it is by far superior than anything baked!

DRINKS:  
1) unsweetened decaf ice tea (peppermint has a good effect on digestive system and so does chamomile),
2) your own fresh made fruit and veggie juices,
3) filtered or distilled water with fresh lemon drops in it (distilled water is the cleanest one. It is recommended in Gerson institute and by Dr Normal Walker)
  
NO LIST!: microwave, aluminum dishes, soy, wheat, pasta, pastry, cereals, meats, canned food and drinks. soft drinks, sugared juices from concentrate, ice creams, chocolates, , ...

CALORIES:  
Calories mean ENERGY! We need energy for healing, detoxification, for making it through the day! Calories DO NOT increase your waist line, it is dairy and processed foods (white bread, bleached flour, sweets, bad oils, etc) that does that!
So whole, natural, organic, plant based calories are g o o d !
banana, potato, sweet potato, dates, dried figs, avocado, nuts....

POTS AND PANS  
Stainless steel. If you have aluminum cooking pans, throw them away! They are the worst kind for your health!


4) WHAT ABOUT PROTEIN ?
Plant based protein is a lot easier to digest and absorb. The body likes it a lot better and knows just what to do with plant food. Animal protein is very hard to digest and during digestion it robs the body of many nutrients (calcium). The body uses digestive enzymes and catalysts - minerals and vitamins for a process called digestion. To make it sound really simple - if the food we eat does not contain enzymes nor calcium (largest catalyst in digestion), the body will have to find it somewhere - the largest area of calcium, enzyme catalyst are bones. So whenever we eat inorganic, dead, processed and/or animal source food, we are robbing ourselves of vital nutrients and using up a lot of energy along the process.
That is why when people detox, heal the body, cure themselves, they all achieve that by removing animal & processed food and begin to juice, eat enzyme and mineral and vitamin rich food! 

Protein - when the body is done digesting the protein molecule, it is left with AMINO ACIDS! The body needs amino acids for TISSUE BUILDING and NOT energy! 
Carbohydrates - when the body is done digesting the carbs, it is left with GLUCOSE. The body uses glucose for ENERGY!

Dr T Colin Campbell, prestigious Professor Emeritus of Nutritional Bio Chemistry from Cornell University, concluded (after 50 years of research) that the amount of protein our bodies need is 10% of total calories! That means that the amount of protein we find in plant based diet is in a perfect harmony with human body and its needs!

The protein propaganda is a myth!
In countries where people consume very little animal protein (China) they have a very low percentage of degenerative diseases.
In countries where people consume a lot of animal protein (USA, Finland, Western Europe, etc) the percentage of degenerative diseases is very high and growing!  

Dr T Colin Campbell participated in the largest research done in the 1970s on nutrition where USA and Chinese governments collaborated in the process. What they have discovered is that animal proteins cause cancer. Dr T Colin Campbell wrote a book called THE CHINA STUDY where he give a detailed account on what they have observed!

Here is an entertaining video of a man who has been RAW VEGAN for many years and it looks like he has a lot of muscles based on purely living plant diet!



5) MENU
We want to make sure that the body gets as many nutrients as possible and juicing is the method which allows us to consume more veggies/fruit than we could by eating them. It also enables us to have all of the nutrients in the food.
2 out of 3 or 3 out of 5 meals should be juiced fruits and vegetables if possible.

JUICER: 
1) For juicing veggies: Make sure that you do not get a centrifugal juicer for those ruin all enzymes in the food (the cutting of the foods, the heat of the spinning knives..). You need a press juicer, the kind that squeezes the juice out of anything without slicing your food. That way we can drinnk 4x more vegetables than we could possibly be able to eat! The body needs a lot of raw material in order to cleanse and repair. The most affordable one I found was Omega 8005. See demonstration.
I use it for juicing vegetables, fruit, making fruit sorbet, nut butters...

2) For smoothies you will need a blender with knives. Vitamix is the best one, but if the budget is tight, any one that crushes ice will be strong enough to do the job.
I juice my fruit in the press juicer first in order to extract the juice and then I pour the liquid in a blender, add banana, coconut butter (excellent for health), hemp oil (best source of Omega 3 and Omega 6 fatty acids) and make my smoothie. Blending is done in 3 seconds and no enzymes are lost.

BREAKFAST
1) Fresh fruit or sliced fruit with cinnamon and honey,
2) Fruit smoothie (your fav fruits with fresh apple juice or lemon juice or coconut water. Do not use regular water as it will deplete the enzymes)



BREAKFAST 2:
If you are still hungry like me, you can have more bananas, mango, pear etc
Or oatmeal with fruit and cinnamon. Make oatmeal with water. Do not use almond milk as it contains additives and it may interfere with your healing!


LUNCH 1:
If you had oatmeal for breakfast, then your lunch should be all veggies and alkaline starches such as potato and sweet potato, roots like beets etc. You can steam your veggies, cook them in cocomut oil, bake them, use your favorite herbs (no curry!) etc
If you had an all fruit breakfast you can also chose to have salmon with veggies or veggies with goat cheese and potatoes. You can serve veggies with brown rice (do not use white rice), lentils, etc.

There are many ways one can make potatoes and veggies. I sometimes make a potato-veggie pie or I saute everything together. But I prefer to taste each veggie as it is. Go to your local farmers market. Talk to the farmers. Get introduced to new and exciting veggies. Get new recipes from people and adjust them to your diet. Have fun with food!There are many many healthy vegan dishes out there.

I recommend taking digestive enzymes with cooked food. Cooking ruins the enzymes from food and it is a strain on the already weaker body to digest it. We regain a lot of energy providing some extra enzymes in a supplement form and of course, eating/drinking plenty of raw fruits and veggies during the day.

DESSERT: 
dates, almonds, sweet potato with banana, honey and almonds, dried figs, dried fruit, etc I love making my own Larabars. I use dried fruit and just pecans and dates.
    




DINNER:
The body's digestion slow down greatly after 6pm. That is why eating light and nutritional foods is very important. Raw vegetables are for this menu.
1) Ideally this is when we would juice! I recommend Omega 8005 juicer, It is a press juicer (centrifugal ones slice the food and in the process of fast rotation it ruins the enzymes!). It separates pulp from the juice and that way we can consume a lot more than what we would be able to eat and we can also digest food a lot better since there will be no fiber! The body will receive 100% nutrients without any work and that will give it a lot of energy for detoxification and repair!



2) If you do not have a juicer, make a salad (hopefully organic!)! Make sure you use a lot of greens, lettuce, chard, kale, cucumber, bell pepper, sprouts, avocado, etc.

All vegetable juices have a cleansing effect on the body and give all nutrients to it!
For juicing vegetables I recommend one of the first holistic doctors, Dr Normal Walker, who also created the famous Norwalk juicer! He wrote several books on food and health which are listed here. The book I am recommending for juicing is FRESH VEGETABLES AND FRUIT JUICES!


Side note: during the first 2 or 3 months my body was unable to digest several foods on the alkaline list (allergies), so I did not have tomatoes, eggplant, lime, apple cider vinegar, walnuts, Brazil nuts, peanuts. If you are like me in that one, do not worry! After your skin heals and you keep taking digestive enzymes and probiotics and you change your body's chemistry to alkaline, you will be able to have these foods (tomatoes, eggplant, apple cider vinegar, lemon, nuts) and be fine! Give your body a chance to heal.
